INGREDIENTS

  • 75 grams of herb butter
  • 2 medium-sized onions
  • 1.5 liters of vegetable broth
  • 200 grams of celery
  • Salt to taste
  • Pepper to taste
  • 2 garlic cloves
  • 200 grams of Leek
  • 300 grams of carrots
  • Parsley for garnishing

Method to make the Adam Ragusea Vegetable Soup

Step 1:

First, you must do some prep work for making the yummy vegetable soup. Mince the garlic cloves.

Step 2:

Peel off the carrots and then chop off these carrots.

Step 3:

Chop the celery using your sharp knife.

Step 4:

Finely dice the leek.

Step 5:

In the next step, peel and chop off the potatoes.

Step 6:

Melt butter in the frying pan and add all the diced vegetables simultaneously.

Step 7:

Once the vegetables are fried enough, translucent, and softened, pour the vegetable broth into the pan.

Step 8:

Put the lid and simmer at low heat.

Step 9:

Sprinkle salt and pepper and stir again. Boil the soup and then transfer two cups of soup to a blender. Blend the cooked vegetables and broth in the blender at high speed.

Step 10:

Add the blend back to the rest of the soup.

Vegetables are fried separately before adding the broth to the pot. This makes them softened and translucent. You can either add the veggies one by one or all at once.
