  • 4 tbsp ghee
  • 6 tbsp whisked yogurt
  • 2 cups Sugar
  • 2 tbsp Milk
  • 4-5 finely chopped Pistachios

How to make Balushahi by Sanjeev Kapoor Recipe?

  1. In a large bowl, mix together flour and soda bicarbonate. Add 4 tablespoons of ghee or oil to the flour mixture. Mix with your hands until the mixture attains a texture or appearance like bread crumbs.
  2. In a separate container beat the yogurt. Add yogurt into the flour mixture. Knead the mixture into a smooth and soft dough.
  3. Then cover the prepared dough with the damp cloth and wait for it to settle down for 30-35 minutes.
  4. Then divide your dough into equal portions and make small balls out of it.
  5. Make a dent at the center to turn it into the required shape.
  6. In a kadhai, heat enough quantity of oil to fry your balls. Fry 2-3 balls at one time. Keep the heat low.
  7. Be aware that the ghee does not get extra hot. Otherwise, it will ruin your balls.
  8. After frying of few minutes, when the Balushahi started to come to the top, you will see it turns beautifully golden after frying.
  9. Drain the excess oil on the absorbent paper.
  10. Then to cook the syrup for your balushahi, in a deep pan mix one cup of water with sugar and cook on high heat until the sugar gets completely melted.
  11. Add the given quantity of milk into the cooking syrup.
  12. Then in a bowl soak your cooked balushahi balls in this cooked syrup for 1-2 hours.
  13. After the required time gently remove the balushahi from the syrup and fill the serving plate with these balls.
  14. Also, top your balushahi with the crushed pistachios and let them settle for an hour for better results.
