- 1 3/4 cups all-purpose flour
- 4 ripe bananas, mashed (about 1 1/2 cups)
- 1/2 cup melted unsalted butter
- 1 cup toasted pecans, chopped
- 1/2 cup granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon fine salt
- 1/4 teaspoon freshly grated nutmeg
- 2 large eggs, lightly beaten
- 1/4 cup buttermilk, sour cream or yogurt
- 1/2 cup light brown sugar
- 1 teaspoon pure vanilla extract
How to make banana bread
Preheat oven to 350F. Gently grease a 9×5 inch loaf pan with butter.
Whisk together the flour, granulated sugar, baking soda, cinnamon, pecans, salt and nutmeg in a large bowl.
In another bowl, mix eggs, melted butter, buttermilk, brown sugar and vanilla. Stir in mashed bananas.
Now, fold in the banana mixture into the flour mixture until combined. Do not over mix; it is alright if there are some lumps.
Pour the batter into the loaf pan. Bake for 1 hour until brown. Allow the bread cool down in the pan for 10 minutes and then transfer it to the cooling rack. Slice and serve.
