Barefoot Contessa Roasted Shrimp

The roasted shrimp is a pretty common appetizer for seafood lovers. It takes just 15 minutes to prepare and roast. First you have to peel and devein the shrimp but keep the tails on. Toss them with olive oil, salt and pepper and roast for 10 minutes in the oven.

The roasted shrimp needs cocktail sauce for dipping. The cocktail sauce is even more delicious than the classic sauces. Arrange the roasted shrimps around the bowl of cocktail sauce and serve.

Ingredients

  • 2 pounds (12 to 15 count) shrimp
  • 1 tablespoon good olive oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

For sauce

  • 1/2 cup Heinz chili sauce
  • 1/2 cup Heinz ketchup
  • 3 tablespoons prepared horseradish
  • 2 teaspoons freshly squeezed lemon juice
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 teaspoon Tabasco sauce

How to make roasted shrimp

Preheat oven to 400F.

Prepare shrimp for roasting: peel, devein, and leave the tails on. Spread them on a sheet pan, mix with olive oil, salt and pepper.

Bake for 8 to 10 minutes until pink and cooked through. Set aside to cool.

For the sauce: combine the horseradish, lemon juice, chili sauce, ketchup, Worcestershire sauce, and Tabasco.

Serve the sauce as a dip with shrimps.
