Betty Crocker Potato Soup Recipe

Potato soup is a simple dish, which combines the soft consistency of potatoes, creating a rustic and full of flavor first course. This soup is a substantial comfort food, perfect for a relaxing dinner after a long day, but also as a lunch the day after.

The potato soup, in fact, is able to deny anyone who says reheated soups are not good. If you can keep some, try it heated, perhaps with the addition of a little chilli: it will be even more creamy and tasty!

Ingredients

1 ½ cups water

5 medium potatoes, peeled and cut up

1 medium celery stalk, sliced (1/2 cup)

¼ cup water

1 cup milk

¾ teaspoon salt

1/8 teaspoon white pepper

2 green onions, thinly sliced

How to make potato soup

Boil 1 ½ cup of water in 3-quart saucepan. Add potato and celery. Cover the saucepan and heat to boiling then reduce heat and simmer for 20 minutes until potatoes are tender.

Drain liquid to blender. Take 3 cups of boiled vegetables and put into the blender. Add ¼ cup of water and blend until smooth.

Add pureed vegetables back to the saucepan. Add remaining ingredients and stir. Heat over medium heat for few minutes and stir occasionally.

Hot and delicious potato soup is ready, pour in bowls, garnish with fresh parsley or sour cream if you like and serve.
