Winco Blueberry Muffin Recipe

These blueberry muffins represent the original and perfect recipe for American muffins that can be found in any London or American coffee shop.

Today I propose one of the most popular flavors: blueberry muffins. They are without butter, but to make them so soft are the oil and the whole yogurt, which you can also replace with that of berries, to give an even more fruity flavor.

Ingredients

  • 325 grams flour
  • 150 grams caster sugar
  • 1 egg
  • 120 grams seed oil
  • 120 grams whole white yogurt
  • 120 grams milk
  • 1/2 berry of vanilla
  • 2 teaspoons baking powder
  • 1 pinch salt
  • 1/2 teaspoon bicarbonate
  • 400 grams blueberries or berries

How to make blueberry muffins

In a bowl, whisk the egg and sugar by hand with a whisk until the mixture is light and fluffy. Then, add the oil, milk and yogurt.

Separately, mix together the flour, baking powder, baking soda, salt and the vanilla seeds. Combine them with the liquid ingredients. Mix with a whisk until the mixture is blended. Combine the blueberries.

Note: if you use the frozen ones, add them still frozen, do not let them defrost otherwise they will color the dough purple!

IMPORTANT: do not mix too much. The mixture must be lumpy! Line a muffin pan with the cups and, with the help of an ice cream scoop, fill them to the top.

Bake at 180 degrees for 20 minutes. Delicious blueberry muffins are ready!
