Bob Evans Vegetable Soup Recipe

Bob Evans vegetable soup was mainly supposed to be an all vegetable soup but the addition of beef in it makes it way more delicious and yummy. The nutritional importance of this soup is already known as vegetables and beef together provide all the essential nutrients to you.

Bob Evans Vegetable soup is my Family favorite as it is extremely refreshing and the recipe is very convenient. You don’t have to spend a lot of time in the kitchen to make this soup. As the recipe is just an hour long and is worth making.

INGREDIENTS

  • 2 tablespoon sugar
  • 2 tablespoons dried basil
  • 1 cup sliced carrots
  • 1  cup chopped celery
  • 3 cups water
  • 1 bay leaf
  • 1/2 tablespoon salt
  • 1 pound lean grounded beef
  • 1 medium-sized onion, chopped
  • 1/4 tablespoon pepper
  • 3 medium-sized potatoes, peeled
  • 1 can V8 vegetable juice
  • 1 can of Italian diced tomatoes

Method to make delicious Bob Evans Vegetable Soup

  1. Cook beef in the fried onion, in a nonstick pan, after heating a little oil.
  2. You need to wait until your meat changes its color. Also, continue to break the meat into pieces using your wooden spatula.
  3. Once the beef is done cooking, season it using salt and pepper. Adjust the quantity of the seasonings if needed.
  4. Pour the V8 vegetable soup into the beef and boil. While it is boiling, dice your vegetables including the potatoes, celery, and carrots.
  5. Once diced, put all these vegetables into the boiling beef mixture.
  6. Pour the Italian diced tomatoes into the soup without draining. Pour some water into the soup. Season again using additional salt and pepper. Sprinkle the basil into it. Add some sugar.
  7. Add the bay leaf into the cooking soup. Cover from the top using the lid of the skillet and let simmer for more than half an hour.
  8. In the meantime, all of your vegetables will be tenderized and beef will develop its taste in the soup.
  9. Once the soup is good enough when you taste it, and your vegetables and beef are merges well in the soup turn off the heat.
  10. Pour the soup into the serving bowls and serve hot!

What to do if my soup is very thin?

To thicken your sauce add some corn flour to the soup. Also, reduce the quantity of water that you have added to the soup to prevent it from getting too thin.

Why we have added sugar to the soup?
