- 1 (28 oz) whole peeled tomato, drained
- 1/2 large onion finely diced in food processor
- 2 (2 oz.) green chilies diced
- 1 oz. Spring canned jalapenos
- 2 springs cilantro leaves, finely minced
- 1/2 tablespoon garlic powder
- 1 tablespoon coarse sea salt
Method to make Carlos O Kelly’s Salsa
- To pulse the onion, chop it into smaller cubes and add to the food processor. Also, pulse the garlic with onion in the same go.
- Make addition of cilantro and spice the pulsing mixture with salt. Pulse well until everything is well incorporated.
- Take the blended mixture out in a bowl.
- Then it’s time to pulse the tomatoes to make a tomato paste-like mixture.
- Add the tomatoes as a whole into the processor without chopping. Also, make sure they are drained.
- Do not completely blend it or do not make a puree of these tomatoes. It’s just that you want to turn them into a paste with smaller chunks left in it. It should not be much smooth and liquid-like.
- Now add the blended tomatoes to the blended onion mixture and stir both together in good consistency.
- Mix the jalapenos and green chilies into the mixture.
- Your salsa is almost ready. You just have to refrigerate it or chill it before serving.
- Serve it as a side with your favorite mains!
