Ingredients

  • 1 pound macaroni pasta
  • 1 1/2 cups whole milk, divided
  • 2 tablespoons all-purpose flour
  • 2 cups shredded cheddar cheese
  • 1 teaspoon kosher salt
  • 1/4 teaspoon powdered mustard

How to make Mac and Cheese

Boil 4 quarts of salted water over high heat in a large pot. Add pasta and cook for 8 minutes. Drain and set aside.

Transfer 1 cup of milk to a saucepan and heat over medium flame. Add flour to the remaining ½ cup milk and whisk until there are no lumps. Add this milk and flour mixture to the hot milk and continue whisk for 3 to 4 minutes until the mixture thickens to the consistency of heavy cream.

Reduce the heat to low and add cheese. Stir in mustard and salt. Stir until the cheese is melted. Remove from heat.

Transfer macaroni to the serving bowl and add half of the cheese sauce. Stir to combine well. Add remaining cheese sauce and mix. Taste and add extra seasoning if you want.
