Chicken Do Pyaza Recipe | Chicken and Onion Curry

The delicious and aromatic chicken do pyaza is an Indian curry that is made with chicken and onions. The wonderful flavor of the curry comes from the spices used in this recipe. The tomatoes and yogurt are used to make the gravy.

The masala onion sauce is rich in taste and wonderfully fragrant. The onions are used in two ways in this recipe that’s why it’s called Do Pyaza. First, we add diced onions and cook with spices and the large pieces of onion are added at the end with yogurt.

You can make the curry spicy by adjusting the quantity of red chilli powder and green chilli according to your taste. The quantities used in this recipe make a moderately spicy curry. Smash the green and black cardamoms before adding to release the wonderful flavor.

Ingredients

  • 1 kilo boneless chicken cut into small pieces
  • 2 medium onions diced
  • 1 onion cut into large cubes and separated
  • ¼ cup yogurt
  • 3 tablespoons olive oil
  • 3 whole black cardamoms smashed
  • 4 green cardamoms smashed
  • 4 cloves
  • 1 teaspoon black peppercorns
  • 1 teaspoon cumin seeds
  • 1.5 teaspoons cumin powder
  • ¼ teaspoon cinnamon powder
  • 2 inches ginger chopped
  • 2 cloves garlic minced
  • 1 teaspoon red chilli powder or to taste
  • 3 green chilli chopped
  • ½ teaspoon turmeric powder
  • 1.5 teaspoons coriander powder
  • 1 teaspoon garam masala powder
  • ½ teaspoon garam masala
  • Water as required
  • 1 cup tomatoes chopped
  • Salt to taste

How to make chicken do pyaza

In a large saucepan, heat oil on low-medium flame and add cumin seeds, peppercorns, cardamoms, and cloves. Stir-fry for half a minute, do not let them burn.

Add diced onions and sauté until lightly brown. Add green chilli, ginger, and garlic and sauté for 1 minute. Then add tomatoes and cook for 2-3 minutes.

After that, add red chilli powder, cinnamon, turmeric, cumin powder, coriander, and 1 teaspoon of garam masala powder. Mix and add few tablespoons of water, so that the masala powders do not burn.

Cook masala for 4-5 minutes then add chicken pieces and mix with masala mixture to coat them well. Cook the chicken for 15 minutes; stir every 2-3 minutes.

Add yogurt and large pieces of onion and mix. Sprinkle over the remaining garam masala, mix everything very well and cook for 5 minutes.

The delicious chicken do pyaza is ready. Serve with warm rice or roti.
