Chicken Wild Rice Soup Pioneer Woman

Even better than traditional chicken noodle soup, this creamy chicken and wild rice soup is simply delicious.

Easy to prepare in about 40 minutes, it is packed with nourishing ingredients. It is eaten in small portions before a meal or as a meal soup, accompanied by a little bread and a green salad.

The following recipe makes about 4 to 6 servings. Comforting at will, it will become one of the essential soups in your home!

Please note that this recipe is inspired by Pioneer Woman’s chicken wild rice soup recipe with little variations.

Ingredients

1 teaspoon of olive oil

1/4 cup (65 mL) finely chopped red onion

1/2 cup (125 mL) diced carrots

1 teaspoon of dried oregano

2 tablespoons of flour

1 packet of wild rice

4 cups (1000 mL) low sodium chicken broth

3 cups (750 mL) water

3/4 cup (190 ml) cream

1/4 cup (65 mL) milk

1 cup (250 mL) chicken (cooked) and cut into pieces

Salt and pepper to taste

Cooking method

Heat the oil in a large pot over medium heat.

Add the onions and carrots and cook until softened. Add oregano, flour, and the rice seasoning packet. Mix. Add the rice, chicken broth, and water. Bring to a boil, cover, and simmer for about 15 minutes.

In a small pot, mix and heat the milk and cream. Pour into the soup. Add the chicken pieces.

Season with salt and pepper. Cook until the rice is cooked through.

Once the rice is cooked, remove from heat and serve. Your yummy chicken wild rice soup is ready.
