Chocolate Chip Zucchini Bread Paula Deen

Preparing bread at home is always a great idea, it’s fun and much easier than you think, all you need is to follow the recipe and want to experiment! Zucchini bread is perfect to serve as an alternative to classic white bread, for a delicious appetizer or as a base for excellent sandwiches!

Zucchini give the homemade bread an extra touch of flavor and thanks to the whole wheat flour it is very digestible and rich in fiber. Like all preparations, even for zucchini bread you need to have a little patience to wait for the yeast to do its job but I assure you that the result is absolutely worth it! Ingredients

3 cups all purpose flour

1/2 teaspoon baking powder

1 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1 teaspoon baking soda

3 eggs

2 cups white sugar

1 cup vegetable oil

2 teaspoons vanilla extract

2 cups grated, plus ribbons for serving zucchini

1 cup chopped pecans

1 cup semisweet chocolate chips

1 tablespoon orange zest

How to make zucchini bread

Preheat oven at 350 °F.

Grease two 9×5 inch loaf pans.

Sift flour, baking powder, spices, salt and baking soda together.

Beat eggs in a large bowl until light and fluffy. Then add sugar and continue beating until well mixed.

Stir in oil, zucchini, pecans, chocolate chips, vanilla and orange zest. Mix in sifted ingredients and mix them all well.

Pour the batter into prepared loaf pans and bake for 50 minutes or until wooden pick inserted comes out clean.

Remove pans from oven and then remove loaves from pans. Let them cool before slicing.

Serve with whipped cream and ribbons of zucchini.
