Cracker Barrel Chicken and Rice Recipe

Ingredients

  • 1.5 Pounds of Chicken cut into strips
  • 2 cups cooked rice (al dente)
  • 1 diced onion
  • 1 Can Cream of Mushroom Soup (or cream of chicken)
  • 1 Packet of Chicken Gravy

How to cook chicken and rice

First boil the rice, when the rice is halfway cooked, add diced onion and continue boiling the rice until cooked.

Grease a baking dish with non-stick spray or lightly coat with extra virgin olive oil.

Make a layer of cooked rice at the bottom of the baking dish.

Place the chicken strips on the top of the rice layer.

Pour the cream of mushroom soup over the chicken evenly.

In a bowl, combine the Packet of Chicken Gravy and 1 cup of water. Mix well and pour it over the chicken.

Cover the baking dish with aluminum foil and bake for 45 minutes in the preheated oven at 350F until the chicken is done.

The delicious chicken and rice casserole are ready. Remove the foil and serve immediately.
