This dish consists of wheat bread rolls and Urad dal. The dish is served in traditional pots while the wheat bread that is known as baati is soaked in pure ghee. I was introduced to this recipe when I attended a wedding in Rajasthan and I was so awed with its taste.
So I decided to try this recipe at home. The dal is made very spicy which is then compensated with the baked baati. We always serve dal baati hot as it is the requirement of this dish.
INGREDIENTS
- 1/4 cup moong dal
- 1 cup Urad Dal
- 1/4 split Bengal gram (chana dal)
- 1 teaspoon red chili powder
- 2 inch chopped ginger
- 1/2 tbsp turmeric powder
- 1 teaspoon cumin seeds
- A pinch of Asafoetida
- 2 whole dry red chilies
- 3 cloves garlic
- 2 green cardamoms
- 1-inch cinnamon
- 2 bay leaves
- 5-6 curry leaves
- 2 medium tomatoes
- 3 chopped green chilies
- Salt to taste
- 4 tbsp oil
- 1/4 cup fresh coriander leaves
- 2 tbsp lemon juice
- 2 cups whole wheat flour
- 1 teaspoon carom seeds (ajwain)
- 1/4 tbsp baking powder
- 5 cups water
- 1 cup pure ghee
How to make Dal Baati by Sanjeev Kapoor Recipe
- In a large bowl, soak chana dal, urad dal, and moong dal in water for an hour. The quantity of water should be neither too little nor too much. You can take 4-5 cups of water.
- Then boil all these dals after adding salt and turmeric and then mash them properly with each other.
- In a pan heat some oil. Add all the spice and seasonings that are listed above including bay leaves, curry leaves, cardamoms, cinnamon, cumin seeds, dry red chilies, asafoetida, ginger, green chilies, and red chili powder, and whichever ingredient is left. Saute the whole mixture for some time.
- In the next step add the cooked dal to the mixture and blend properly. In the end, pour in the lemon juice and shower coriander leaves to give it a good look.
- For making baatis, in a bowl mix flour, baking powder, and salt. Pour some water and knead the dough until it gets a soft and smooth surface.
- Roll the dough into round bowls and keep the size of these rolls smaller. Place them in the baking dishes after greasing the dishes. Bake your baatis in the preheated oven for 20-30 minutes at 180 degrees celsius.
- And you are done. Serve a bowl of pure ghee to soak baatis and dal while hot.
