Learn how to make dal fry with this simple recipe by Sanjeev Kapoor. The dal fry or tadkewali dal is a common Indian meal. Toor dal or split pigeon peas are used for this recipe.
Toor dal is cooked until soft and tempered with sautéed onion, garlic, cumin seeds, and red chilli powder. For the beautiful yellow color of dal, a pinch of turmeric powder is added to the dal. The dry mango powder (amchur) is good for appetite and adds a unique taste.
The aroma of dal fry is wonderful and makes your mouth water. This spicy thick dal is served with steamed rice, chapatti, or paratha along with achar.
Ingredients
- 1 cup toor dal/arhar dal
- 4 tablespoons ghee
- 1 medium onion chopped
- 3 garlic cloves chopped
- 1 teaspoon dry mango powder (amchur)
- 1 teaspoon cumin seeds
- 1/2 teaspoon red chilli powder
- 3/4 teaspoon turmeric powder
- Salt to taste
How to make dal fry
Heat 2 tablespoons ghee in a pan and add half of the onion and garlic and sauté until golden.
Add dal, turmeric powder, salt, and two cups of water. Bring to a boil on high heat then lower the heat and simmer for 20 minutes.
Add dry mango powder and simmer for another 15 minutes.
Heat 2 tablespoons of ghee in another pan and add cumin seeds and sauté until the color changes.
Add the remaining onion and garlic and sauté until pink. Add red chilli powder and sauté for few minutes.
Transfer this seasoning to the dal pan and simmer for 2 minutes.
The delicious dal fry is ready. Serve hot with rice, chapatti, or paratha.
