How to Prepare the 3-Ingredient Cake
To make the 3-ingredient cake, first finely chop the 55% dark chocolate with a knife, put it to melt in a saucepan in a bain-marie, also add the butter into small pieces.
Mix with a spatula to help dissolve and mix the ingredients well. Once ready, let it cool for about 5 minutes. Meanwhile, pour the eggs into a bowl and whisk them with electric whips, must be clear and frothy, it will take about 5 minutes.
Now pour the warmed melted chocolate into the bowl with the whipped eggs, as you pour the chocolate, mix the mixture from bottom to top so as to obtain a well-blended dough.
Line the bottom of a cake pan with parchment paper, then butter the bottom of the mold and the sheet of parchment paper. Pour the mixture into the pan.
Now place the pan on a dripping pan and pour water at room temperature to cover half of the mold. Bake for 5 minutes in a preheated static oven at 210 ° on the central shelf, then cover with aluminum foil and cook for another 15 minutes.
When cooked, take the cake out of the oven and let it cool at room temperature for a couple of hours. Then put it to harden in the refrigerator for at least 1 hour. After this time you can unmold the cake.
