Hale and Hearty Soup Recipe

  • 4 large sized potatoes
  • 1 large onion diced
  • 1-quart chicken broth
  • 1 lb chorizo sausage, fresh or dried
  • 1 (15-ounce) can of dark red beans
  • 1 tablespoon olive oil
  • 1 bunch Kale, washed and chopped
  • Salt to taste

Instructions to make a super Hale and Hearty Soup

  1. You first need to do some prep work for your recipe so bring the sausage and dice it to make smaller cubes of it.
  2. Now bring a frying pan and add oil to it. Heat this oil at medium heat. You need to stir fry the diced sausage in this oil.
  3. You also have to stir fry the onion along with the sausage so that it will be softened enough.
  4. Continue frying for 5-8 minutes and then turn off the heat.
  5. Use paper towels to drain the oil after taking the sausage and onion mixture out of the oven.
  6. Cook the kale for 5-8 minutes so that it will be added to the sausage.
  7. Boil pasta for 10 minutes as it is needed to be combined with the sausage.
  8. Dice the boiled potatoes to add to the soup.
  9. Take a skillet and pour the broth into it. Put all the cooked and prepared ingredients into the broth. Simmer for some time. To add more flavor, season with the mentioned seasonings like salt and black pepper.
  10. Boil by adding the red beans and ditalini into it.
  11. Simmer until all the flavors are developed into your soup.
  12. Turn off the heat and serve while hot!
