Usually, mashed potatoes are not considered a healthy food because of the fat and cream used in traditional recipes. But, I will show you a perfect healthy recipe for mashed potatoes that do not contain lots of fat and butter.
You can enjoy this classic dish without using heavy cream to make the potatoes delicious and creamy. I am going to use a light sour cream with whole milk to make a smooth paste of mashed potatoes.
I have used an electric mixer in this recipe, but you can use a potato masher as well. Always choose the right type of potatoes for this recipe, like Yukon Gold or Russets. Boil the potatoes in salted water for a better taste.
The boiled potatoes should be super soft and tender. If any piece of the potato remains undercooked, the whole recipe will be ruined and you will not get the good result. All the other ingredients you have to add should be a little warm or at room temperature.
Do not add too much chicken stock and do not overbeat the potatoes. The end result of mashed potatoes should be light, creamy, fluffy, and delicious.
Ingredients
- 8-10 medium starchy potatoes
- 1/4 cup sour cream
- 1/4 cup whole milk
- 1/4 cup warm chicken stock
- Salt to taste
- Ground white pepper to taste
How to make mashed potatoes
Rinse, peel and cut the potatoes into small pieces. Add cold water and salt to a medium saucepan and place the potatoes in water.
Cover the saucepan and cook over high heat. When it starts boiling, lower the heat and let the potatoes cook for 20 to 25 minutes until they are super tender.
Drain the boiled potatoes and let them dry for few minutes. Then add the potatoes to a pot.
Add milk and sour cream to the potatoes. Start beating them with an electric mixer at a low speed. Then increase the speed to medium-high and beat until the potatoes are fully mashed and smooth.
Now, add few tablespoons of warm chicken stock and beat on a high speed. Add more tablespoons of chicken stock and beat until the desired consistency is achieved.
Adjust seasoning and serve immediately.
