Jain Pav Bhaji Recipe without Potato

Jain Pav Bhaji is popular street food in Mumbai, India. The bhaji is a spicy curry made with mashed vegetables served with pav, which is light and fluffy bread. The recipes for pav bhaji are slightly different in different parts of the country.

The bhaji is usually made with potatoes, onions, capsicum, carrot, and tomato. But the Jain pav bhaji recipe is made without potatoes, garlic, and onion. The taste is quite similar to the regular Mumbai pav bhaji.

The cooking method of bhaji is not very complicated. You have to boil the vegetables, mash and cook in a pan or kadai with spices. The recipe takes less than an hour to ready and you can enjoy it any time of the day.

Ingredients

  • 2 Raw Bananas
  • 1 cup Cauliflower Florets
  • 1/2 cup Green Peas
  • 1/2 Capsicum
  • 3 Tomatoes
  • 2 Tbsp Oil
  • 2-3 tsp Pav Bhaji Masala
  • 1/2 tsp Turmeric Powder
  • 1 tsp Red Chilli Powder
  • 1 Lime
  • Chopped Coriander leaves
  • Salt to taste
  • Water as required
  • Butter to serve (Optional)

How to make pav bhaji

Cut the bananas into large pieces and add to a pressure cooker along with 2 cups of water and cook until fully cooked. Drain the bananas and allow them to cool.

Boil the cauliflower florets and green peas in a pressure cooker or in an open pan until cooked. Drain.

Peel the boiled bananas and roughly mash them with a fork. Put tomatoes in a blender or mixer and blend until a smooth puree is obtained.

Heat oil in a pan or kadai, add tomato puree and cook for few minutes. Keep stirring. Add turmeric powder and pav bhaji masala. Mix well.

Add bananas, cauliflower, peas and finely chopped capsicum. Mash the vegetables with a potato masher and keep the consistency you want. Roughly mash them if you want a chunky bhaji.

Add a little water if needed then add salt and red chilli powder. Mix the bhaji well and cook for 8-10 minutes. Stir occasionally and add a little water if the bhaji gets too dry. Turn off the heat.

Finally, add lime juice to the bhaji and mix well. Transfer the bhaji to a serving plate and garnish with chopped coriander leaves. Serve with butter toasted pav.
