Gluten is a protein substance contained in many cereals such as wheat, barley and many others, so it is an element present in most of the basic recipes of our kitchen: think of pasta, bread, desserts where they are dough and baking are provided, but also biscuits and desserts, where flour and water are mixed.
To make your family follow a varied and balanced diet, you must not be afraid to experiment and try new things: proposing gluten-free dishes on the table does not mean having to give up taste and your favorite recipes, but rather have fun in the kitchen to create their tasty variations, which you will like even more than the original.
To prepare a classic recipe in a gluten-free version, all you have to do is replace the cereal flour with other types of flour easily available on the market: corn, rice, chestnut, buckwheat, tapioca, quinoa flour, and many others. In this recipe, we are using King Arthur gluten-free flour. It is healthy and you can make soft sandwich bread with it.

3 cups (468g) King Arthur Gluten-Free All-Purpose Flour
4 tablespoons (57g) soft butter
3 large eggs
1 cup (227g) warm milk
1 1/4 teaspoons salt
3 tablespoons (35g) sugar
1 1/4 teaspoons xanthan gum
2 teaspoons instant yeast
How to make gluten-free bread
In a bowl, put flour, yeast, salt, sugar, and xanthan gum together. Mix them until combined. Add milk gradually while beating with an electric mixer (or hand mixer). When all the milk is added there will be a combined mixture. Then add butter and beat again.
Add eggs just one at a time and beat thoroughly. Then cover and let the batter rise for at least one hour.
Grease 8 ½ by 4 ½ inch loaf pan. Pour the batter into the pan. Cover it with greased plastic wrap. Place it a warm place for 45 to 60 minutes and let the batter rise. In meantime, preheat the oven to 350°F.
Bake for 38-42 minutes until golden brown. Remove from oven. Let it cool for few minutes then remove bread from the pan and place it on the cooling rack to cool it completely before slicing.
