The obsession to try out new recipes and especially salads of all sorts is a ritual at my place. This time I came out with this outclass recipe for Kroger Chicken Salad. After making a lot of amendments to the original recipe I made the best salad ever and couldn’t be more proud of myself.
Kroger Chicken is an essential on the lunch and breakfasts twice a week and no one can get bored of it ever as it is so yummier. Making this salad itself is satisfying and I love the process.
INGREDIENTS
- 1/4 cup roughly chopped pecans
- 2 stalks of diced celery
- 1 pound roasted chicken breast
- 1/8 cup white onion, minced
- 1/4 cup dried cranberries
- 1/2 cup non-fat plain Greek Yogurt
- 2 tablespoon granulated sugar
- 1/2 tablespoon lemon juice
- 1/2 cup red grapes, diced
- 1 tablespoon salt
Method to make the Kroger Chicken Salad
- Bring the chicken and dice it into fine cubes to add to the salad. The smaller chunks feel more delicious in the salad.
- Then add these cubes to the blender and shred the chicken into very fine particles.
- Then transfer the shredded chicken to a bowl and pour the yogurt in it. Sprinkle in the salt and then pour the lemon juice into it.
- Turn on the blender again and start mixing at low speed.
- The chicken will get incorporated into the yogurt, completely. Check the taste, and if needed add some more salt.
- Then it’s time to add the vegetables and fruits. First of all, bring the grapes and add them to the chicken mixture.
- Bring the diced celery, make sure it is finely diced and combine with the rest.
- It’s the turn-off cranberries to be added to the salad. Add them and mix well.
- In the end, sprinkle the pecans all over your salad and mix again. Use the same blender for the final blend.
- Put in the fridge and serve when cool.
- The salad is ready to serve. Serve in your breakfast and enjoy!
