Mexican cuisine has already my heart but this Mexican Street Corn is now my absolute favorite. The corn dipped in the yummiest cheese sauce is a blast and also the corn is extremely soft and juicy so you would love it.
INGREDIENTS
- 1/2 tablespoon chipotle chili powder
- Juice and zest of one lime
- 1/4 tablespoon fine sea salt
- 1/4 cup mayonnaise
- 2 crushed garlic cloves
- 4 ears of corn
- 1/2 cup Cotija Cheese, crumbled
- 1/4 cup finely chopped cilantro
- 1/4 tablespoon fine sea salt
- 1/4 cup Crema Mexican Agria Sour cream
Method to make Mexican Street Corn Recipe
- Turn on the heat and get your grill preheated at the temperature of 400 degrees which is exactly suitable for your corn.
- In a bowl, take some water and put your corn in it. Let it be for 12 minutes at least.
- Spray the grill with the cooking spray to grill the corn and prevent it from burning.
- Bring your water-soaked corn and put it on the heated grill. Continue grilling the corn for 10-12 minutes at least.
- Flip them, every few minutes to get cooked from all sides.
- Bring a mixing bowl and prepare the topping for your grilled corn. Add the Crema Mexican Agria Sour Cream and then add mayonnaise to it.
- Stir them and then add Cotija Cheese into it. Add the crushed garlic and then pour lime zest into it.
- Also, add some cilantro at the same time.
- Bring the corn put it on the platter and then pour the cheese mixture over it. Bring the chili powder and shower it over the corn.
- Bring some more cheese and put over the top and spread some cilantro.
- Your Mexican street corn is ready to serve!

Is it necessary to soak the corn in water?
Yes the soaking of corn in water makes it softened and juicy enough o be grilled and then you can coat it with the dressing. If you want juicy Mexican corn, you must do it.
Can we sue cheese other than the Cotija?
Yes, you can use any kind of your favorite cheese. You can use cheddar and mozzarella but I personally prefer this Cotija one that’s why I have used it.
