- 4 egg whites
Method to make the Mile High Lemon Meringue Pie
To prepare the batter you must put the flour in the food processor. Then you have to add butter to it and add salt. Blend at high speed.
Once the crumbs are formed, then you must add egg yolks into it and also pour some water. Blend again and a dough will form as a result.
Bring the pastry of the pie, wrap it up with plastic wrap, and put it in the refrigerator.
Bring the baking pan, lubricate it with the butter, and then put the formed pastry dough into the pastry pan. Bring an egg white and brush this egg white on top of it.
Put the baking pan in the oven and bake it at a suitable temperature of 400 degrees. While the pie gets baked, you can prepare your lemon curd. Pour lemon juice into the jus and also pour water into it.
Transfer the lemon mix to the cooking pan and then add sugar and lemon zest into it.
After cooking and simmering, mix corn flour in the lemon mix and then simmer again. Whisk well on low heat and continue simmering until the mixture gets thickened. Whole eggs and egg yolks are added along with the butter. Continue whisking.
Strain the mix or you can let it pass from a sieve. Then you must pour the mix into another separate clean bowl. Make sure to cover from the top.
Beat egg whites separately and you will see foamy peaks will be formed as a result of the blend.
Bring the sugar and add the sugar into your foamy peak mix. Blend again to make it flavorful.
The last step is to fill the pie crust and dress it. You have to bring the pie crust fill the pie with the lemon curd and then put the soft peaks at the top to dress it from the top.
Put in the oven and bake at 400 degrees. Baking continues for at least 7-8 minutes and then have fun.
