  • 1 lb. Rotini Pasta
  • 2/3 cup Snow Peas
  • 1/3cup Red Bell Peppers, diced
  • 1/3 cup yellow peppers, diced
  • 1/4 cup red onions, diced
  • 1/3 cup carrots, shredded
  • 3 tbsp Water Chestnuts, diced and drained

Ingredients for Dressing

  • 1/3 cup Red Wine vinegar
  • 1 tbsp lemon juice
  • 2/3 tbsp olive oil
  • 1 tbsp Italian Seasonings

Steps to make amazing Newks Pasta Salad

  1. First, you need to boil your peas. Put the peas in the boiling water for a few minutes.
  2. Strain the snow peas out of the water and then set them aside.
  3. Then in the skillet, filled with water add the dry rotini Pasta. Keep boiling until it gets tenderized.
  4. Take the pasta out of water. In the next step, get your pasta submerged in the ice bath. Stir this paste well in the ice bath.
  5. In the next step, drain this pasta and combine it with the snow peas in a large mixing bowl.
  6. Bring a separate bowl and thoroughly combine the red bell pepper with the yellow bell pepper. Also mix in the red onions, carrots, vinegar, and lemon juice.
  7. Don’t forget to add water chestnuts and olive oil. In the end, add the Italian seasonings.
  8. Combine your cooked pasta and the snow peas with the prepared dressing including vegetables.
  9. Your Newks Pasta salad is ready to serve. You can also toss some mayo or cream at the top to make it look more enchanting.
