INGREDIENTS
- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 4 cloves garlic, minced
- 2 tablespoons freshly minced ginger
- 2 tablespoons soy sauce
- 1 (13-ounce) can of coconut milk
- 1/4 cup creamy peanut butter
- 4-6 cups vegetable broth
- 2 tablespoon red curry paste
- 1 red bell pepper, diced
- 3 medium sweet potatoes, diced
For serving
- Chopped fresh Cilantro
- 1 lime, juice squeezed
- Slightly crushed peanuts
Method to make Amazing Thai Sweet Potato Soup
- Take a large-sized cooking pot and heat the olive oil in this pot. Wait until the oil started simmering and then add the chopped onion to it. Also, add the ginger and garlic at the same time.
- Cook and wait until your mixture gets fragrant.
- Then in this onion and ginger garlic paste add the diced red bell peppers followed by the diced sweet potatoes. Saute both of them on low heat for 5-8 minutes until softened.
- Once done add the curry paste to it. Pour the vegetable broth into the rest of the whole mixture and also add peanut butter and coconut milk.
- Boil the mixture and then cook on low heat for at least 20 minutes. Once done cooking let the soup stand for some time to get cooled.
- Then add the cooked soup to a blender to blend it. Blend to the required consistency and also you can add more broth if needed to adjust its texture.
- In the end, sprinkle some salt and pepper to adjust the spice.
- For serving, pour the soup into the serving bowls and top it with crushed peanuts and lime juice. Also, sprinkle the freshly chopped cilantro over it.

Can we add cheese to the soup?
Usually, the Thai soup recipe does not include cheese in it. So following the authentic recipe we also have not added it to this recipe. But you can customize it by adding cheese if you want to.
