Blueberry muffins are the classic American sweets, soft and tasty, which are prepared with a mixture of flour, milk, butter, eggs, sugar and baking powder and enriched with delicious fresh blueberries.
The blueberry muffins are then baked in the oven in special molds or cups and represent the ideal solution for breakfast or a snack for young and old.

Yolks 1
Butter 180 g
Sugar 200 g
Flour 380 g
Baking powder for cakes 1 sachet
Bicarbonate ½ tsp
Salt up to 1 pinch
Vanilla bean 1
Whole milk 250 ml
Lemon zest 1
Blueberries 250 g
How to Make Blueberry Muffins
To prepare blueberry muffins, start by lighting the oven at 180 degrees. First you have to soften the butter at room temperature and then beat it (perhaps with the help of a food processor) vigorously together for a few minutes with the sugar, until the mixture is creamy.
Now break the eggs to add them one at a time and slowly, continuously beating, to the mixture; add the salt and baking soda, then flush warm milk.
Continue to beat until the consistency of the mixture is well swollen and homogeneous. Mix and sift in a bowl the flour, the baking powder, and the seeds taken from the vanilla pod, then add them little by little to the mixture, until everything is creamy and without lumps.
Finally, add the grated lemon peel and the blueberries to the mixture, taking care to keep a third aside which will be used to decorate the surface of the muffins before baking them.
Put the mixture obtained in the paper cups (up to the edge) that you have placed in the muffin molds, sprinkle the surface with some blueberries and place them in a preheated oven at 180 ° for about 20-25 minutes.
Once the blueberry muffins are cooked, which must be golden, turn off the oven and let them rest in there for 5 minutes with the door open, after which you can take them out and let them cool completely.
Your blueberry muffins are ready to be enjoyed!
