Pioneer Woman Broccoli Cheese Soup

This slow cooker broccoli and cheddar soup is so easy and delicious to make, it would almost be a sin not to make a small batch.

Please note that this recipe is inspired by Pioneer Woman’s broccoli cheese soup recipe with little variations.

Ingredients:

4 cups (1000 mL) chopped broccoli heads

1/2 yellow onion, finely chopped

2 cups (500 mL) grated carrots

4 cups (500 mL) vegetable (or chicken) broth

1 teaspoon of salt

1/2 teaspoon of pepper

1/8 teaspoon nutmeg

3 tablespoons of butter

1/3 cup (85 mL) flour

1 cup (250 mL) 10% cream

2 cups (500 mL) grated cheddar cheese

How to prepare broccoli and cheese soup 

Add the broccoli, onion, carrot, broth, salt, pepper and nutmeg to the slow cooker and cook on LOW for 4 hours.

Over medium heat, melt butter, add the flour and whisk.

Take 1 cup of liquid from the slow cooker and add very slowly to the pot, whisking constantly.

Add the cream very slowly, whisking constantly.

Add this mixture to the slow cooker.

Add 1 cup at a time of cheddar cheese.  Mix well.

Close the slow cooker and simmer for about 30 minutes.

Garnish with extra cheddar cheese and serve.
