Blackberry Cheesecake Bars: Made from a delicious sugar cookie crust, cream cheese filling and blackberry filling. An incredibly easy to make and truly divine dessert!
This recipe is definitely the one you want to save for later! The blackberry bars almost remind me of that Fruit Pizza, but also not making cheesecake. It’s a great mix of the two. This dessert is light, refreshing and will soon become one of your favorites!
I love blackberries exactly and sort of forget about them. So these blackberry cheesecake bars are a great way to treat fresh blackberries, and they taste amazing! To make the recipe a little easier, I used a pre-made sugar cookie crust and then spread it over a creamy cheese filling and fresh blackberry filling.
Please note that this recipe is inspired by Pioneer Woman’s blackberry cheesecake bars recipe with little variations.

- Sugar Cookie Crust: For convenience, I used store-bought sugar cookie dough. But you can definitely make your own.
- Cheesecake Filling: The cheesecake filling is rich, creamy, and delicious. After making, you want to spread it on the bars and let it freeze for about 15 minutes to make it solid.
- Blackberry Topping: The filling is super simple and consists only of blackberries, sugar, and water. I love adding blackberries, but you can really use any fruit you want.
Ingredients
1 store-bought cookie dough
Cheesecake Filling:
8th Ounces Cream Cheese at room temperature
1/3 cup large whipped cream
1/2 cup sugar
1/2 cup powdered sugar
3/4 teaspoon vanilla
Blackberry filling:
1 Cup blackberries
1/4 cup sugar
2 to 3 tablespoon water
Preparation
Preheat the oven to 350 ° F. Line a 9 × 9 inch pan with nonstick film. Then press the cookie dough evenly into the pan. Bake for 15 to 20 minutes or until a toothpick is clean. Let cool. You can put it in the freezer for 15 minutes to cool down faster.
For the cream cheese filling, put the cream in a mixing bowl and beat for 2 to 3 minutes or until a whisk forms. Then add the cream cheese and stir until smooth. Then add the sugar, powdered sugar and vanilla. Beat until smooth and creamy. Then spread over the sugar cookie. Place in the freezer for 15 minutes.
For the blackberry filling, combine the blackberries, sugar and water in a small saucepan over medium heat. Cook for 5 to 7 minutes, stirring occasionally. Break the blackberries with the back of your spoon.
Then add spoons of blackberry filling on top of the cheesecake filling. Then rotate with a knife to obtain the marble effect. Place in the freezer for at least 2 hours before cutting.
After cutting into bars, you can add a fresh blackberry if you want. Store in the refrigerator.
Tips + changes
- You can use one graham cracker crust instead, if you prefer.
- Can make in a 9 × 13 “pan and double the recipe.
- Line with foil or parchment so you can easily lift it out of the pan.
- You can also use other berries like strawberries, blueberries or raspberries. Just replace an equal amount.
Can I freeze blackberry cheesecake bars?
These bars can be frozen exactly. Simply cut into squares then wrap each bar in plastic wrap or foil. Then put in the freezer and store in the freezer. If you are careful about eating, take it out of the freezer to thaw it and enjoy!
