Oatmeal biscuits are very special delicious biscuits, made with oatmeal and all-purpose flour.
Oatmeal biscuits are very simple to prepare: oatmeal is combined with raisins and sugar, all tied with butter and egg. After letting the mixture rest in the refrigerator, many small balls are made which are cooked in the oven for about twenty minutes.
The secret to the success of oatmeal biscuits is the dough, which must be well worked so that it is homogeneous.
Oatmeal cookies are great for breakfast and also perfect to accompany afternoon tea.
Please note that this recipe is inspired by Pioneer Woman’s Oatmeal raisin cookies recipe with little variations.
Ingredients
- 3 cup Oatmeal
- 1 1/2 cup All-purpose Flour
- 50 g black raisins
- 2 whole Eggs
- 1 cup Salted Butter
- 2 cup Brown Sugar
- 2 tsp. Vanilla Extract
- 1 tsp. Salt
- 1/2 tsp. Baking Soda
How to Make Oatmeal Cookies
- To prepare the oatmeal cookies, start by mixing butter and brown sugar in a food processor until fluffy. In a bowl, beat vanilla extract and eggs together.
- Now mix flour with baking soda and salt. Add flour into the butter mixture in 2-3 batches and mix them until combined. Now add oatmeal and raisins and mix well until just combined.
- With a cookie scoop or a regular spoon, drop cookie dough on a greased cookie sheet.
- Preheat oven to 350 F. Bake cookies for 12 minutes or until dark brown. If you like crispier cookies, bake them for a little longer,
- Remove from the oven and let them cool slightly. Put cookies onto a serving plate. Enjoy, oatmeal cookies are ready.
Note: Make your oatmeal cookies special by adding dried fruits or chocolate chips!

Storage
Oatmeal Cookies can be stored in a glass jar for 1 week, in a cool, dry place.
The oatmeal cookie dough can be frozen before baking.
