Pistachio Pudding Cookies Recipe

Ingredients

  • 1 (3 ounce) package pistachio instant pudding mix
  • 1¾ cups all purpose flour
  • ¾ cup unsalted butter, softened
  • ¾ cup packed light brown sugar
  • ¾ cup granulated sugar
  • 1 tablespoon vanilla
  • 1 egg
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups shelled chopped pistachios
  • 2-3 drops green food coloring (optional)

How to make pistachio pudding cookies

Preheat the oven at 375F.

Beat the butter and sugar together in a bowl until fluffy. Add egg and vanilla and beat again to combine them well.

Add flour, pudding mix, baking powder, and salt and mix until the dough comes together.

Add chopped pistachio and food coloring and stir well until the coloring is dissolved evenly in the dough.

Take a tablespoon of dough and put on an ungreased baking sheet. Keep the space of 2 inches between the cookies.

Bake for 10 minutes and the cookies are done. Do not over bake the cookies. They should be chewy and soft.

Take them out of the oven and let cool for few minutes, then place the cookies on a cooling rack.
