Potato Salad Recipe No Egg

Potato salad is my all-time favorite salad. It is fresh, creamy, flavorful and satisfying. The potato salad without eggs is a perfect side dish for BBQs and holiday meals. Follow this simple recipe for a delicious potato salad. The ingredients are interesting and you can find them easily in your kitchen.

Ingredients

  • 2 lbs of potatoes (unpeeled potatoes)
  • ¼ cup of red pepper, diced
  • ½ cup apple, diced (unpeeled)
  • ¼ cup onion, diced
  • 1 garlic clove, crushed
  • 1 tbsp sweet pickled relish
  • 2 tbsp green onions, diced
  • ½ cup of tofu mayonnaise
  • 1 tbsp dijon mustard
  • 2 tsp apple cider vinegar
  • Salt and pepper to taste
  • Lemon juice

How to make potato salad without eggs

Cut the potatoes into 1-inch small cubes. Boil in a large pot for 20 minutes or until tender.

Meanwhile, dice the apples and add lemon juice to prevent them from turning brown. Set aside.

Drain the potato cubes and let them cool, then peel them.

In a large bowl, add potato cubes, apple, pepper, onion and garlic.

Now add pickled relish, apple cider vinegar, mustard, and tofu mayonnaise. Mix them well.

Finally, add salt and pepper to taste. Mix all the ingredients well.

Garnish with green onion and serve immediately.
