How to Make Potato Salad with Mayonnaise

The creamy potato salad is everyone’s favorite side dish. This potato salad with mayonnaise can be served with BBQs and rice dishes. The recipe is simple and with few tricks you will be able to make this salad effortlessly.

Use small yellow, white or red potatoes in this recipe. They are easy to cook and tasty in flavor. We have used sour cream and mayonnaise for a creamy and lighter dressing. The celery and pickles add a nice crunch and sweetness of the onion adds more flavor to the salad.

Ingredients

  • 2 pounds small potatoes
  • 1 tablespoon apple cider
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tablespoon mustard
  • 2 hard-boiled eggs, peeled and chopped
  • 1/2 medium red onion, finely chopped
  • 3 celery stalks, finely chopped
  • 1 medium dill pickle, finely chopped
  • 1/4 cup chopped fresh herbs (parsley, chives, or cilantro)
  • Salt and freshly ground black pepper

How to make potato salad with mayonnaise

Boil potatoes in a large pot with salted water for about 15 to 20 minutes. Remove from heat and drain the potatoes. Let them cool, then peel and chop the potatoes in small cubes.

Add the chopped onions in a small bowl and cover with water. Rinse them for few minutes then drain.

Add sour cream, mayonnaise, and mustard in a small bowl and mix them well until creamy.

Now, add onions, pickles, egg, celery, and herbs to the cream mixture and mix well. Then add potatoes to the mixture and stir gently.

Finally, add salt and pepper. The creamy potato salad is ready to serve!
