  • 2 cups water
  • 4 large handfuls of spinach, shredded
  • 1 cup dried cranberries
  • 2 tbsp fresh lemon juice
  • 2 tbsp lemon zest
  • 1 tbsp maple syrup (not pancake syrup)
  • 2 tbsp extra virgin oil
  • 1/2 tbsp freshly ground black pepper
  • 1/2 tbsp salt

How to make Publix Quinoa Salad

  1. First of all, in a fine sieve, rinse the quinoa properly. Then take a frying pan, add the rinsed quinoa to it and fry it on medium heat.
  2. Once a nutty aroma starts coming from the pan, turn off the heat.
  3. In the next step pour water into the pan. Let the mixture simmer and then cook for 10 minutes at least.
  4. Leave the mixture for the steam and then open the lid to let it cool properly.
  5. Then to add the spinach to the salad, shred it. Also, add in the cranberries.
  6. In a bowl add the lemon zest as well as the lemon juice. Then pour in the maple syrup. Also, add olive oil. Spice it up with salt and pepper. Whisk the mixture completely.
