- 2 cups water
- 4 large handfuls of spinach, shredded
- 1 cup dried cranberries
- 2 tbsp fresh lemon juice
- 2 tbsp lemon zest
- 1 tbsp maple syrup (not pancake syrup)
- 2 tbsp extra virgin oil
- 1/2 tbsp freshly ground black pepper
- 1/2 tbsp salt
How to make Publix Quinoa Salad
- First of all, in a fine sieve, rinse the quinoa properly. Then take a frying pan, add the rinsed quinoa to it and fry it on medium heat.
- Once a nutty aroma starts coming from the pan, turn off the heat.
- In the next step pour water into the pan. Let the mixture simmer and then cook for 10 minutes at least.
- Leave the mixture for the steam and then open the lid to let it cool properly.
- Then to add the spinach to the salad, shred it. Also, add in the cranberries.
