Qdoba Tortilla Soup Recipe

The Qdoba Tortilla soup is a combination of Chicken and tortilla both giving their best flavors to the soup. I always consider those winter days the best days when chicken tortilla soup is part of our menu.

The recipe seems a bit complicated but actually, it is not. Before starting the cooking process it is better to gather and prep all of your ingredients and mixtures so that there will be no disturbance during the procedure and your recipe will move forward smoothly at every step.

  • 1 tablespoon vegetable Oil
  • 1/2 cup onion chopped or minced
  • 1/2 cup Poblano Pepper, diced
  • 3 cups Soup Broth (either chicken broth or vegetable broth)
  • 4 corns tortillas
  • 1 tablespoon garlic, minced
  • 2 tablespoon Jalapenos, seeded and diced
  • 1/2 tablespoon cumin
  • 1 tablespoon chili powder
  • 2 cups canned Fire-roasted Tomatoes, diced
  • 1/2 cup tomatoes, crushed
  • 1 1/2 cups shredded Chicken
  • 1/2 cup Monterey Jack Cheese, shredded
  • Crushed Tortilla Chips

Instructions to make delicious Qdoba Tortilla Soup

  1. Grab the pot in which you have to cook the soup. You can use any sort of deep skillet or a special soup pot.
  2. Add some oil to the skillet. Wait until the oil is heated and then add onion and poblano pepper to it.
  3. Sir fry it in the oil for 2-3 minutes.
  4. To add the remaining spices you need to pick each ingredient one by one.
  5. Add the minced garlic and jalapeno and mix them well in the simmering oil.
  6. Also, add the chili powder and cumin again stirring them well with the rest.
  7. Then in a blender, combine the soup broth and tortilla chips. The chips will be completely crushed when blended with the soup and a smooth puree will be formed as a result.
  8. In a large-sized cooking pot, add the fire-roasted tomatoes and pour this broth tortilla mixture into it.
  9. In the next step add all the remaining spices. Shred the chicken and add it to the broth. Let the chicken simmer in the broth for 15-20 minutes.
  10. The heat should be medium to low at this point.
  11. Garnish the Jack cheese at the top of the soup, and season it to taste and serve. You can also serve crushed tortilla chips as a side or can use them to dress your soup.
