Rafferty’s Potato Soup Recipe

Potato soup is one of the oldest soup recipes and is widely made during the winter season all around the world. There are so many recipes on the internet for potato soup and every chef has his own version of this soup. Rafferty’s potato soup is creamy, flavorful, and easy to make.

Waxy potatoes are best suitable for soups and stews as they are low in starch and high in moisture. Yukon potatoes can also be used for potatoes, they are on medium starch.

Do not peel the potatoes when you boil them if you want to make a different texture of the soup rather than fully mashed and creamy soup. The potato soup needs a good amount of salt because the potatoes are good at absorbing the salt. Taste the soup before serving if it is bland then add a little more salt.

Serve this creamy potato soup with French baguette slices and enjoy the winter season.

Ingredient

  • 10-12 medium potatoes, peeled and diced
  • 1 cup of cream of mushroom soup
  • 1 cup of celery soup
  • 1/2 to 3/4 stick butter
  • 1 large finely chopped onion
  • 1 1/2 cup of milk
  • 1 tsp garlic salt
  • 1 (8 oz) cream cheese
  • Salt and pepper to taste

How to make potato soup

Add potatoes and onion to a pot. Add enough water to cover the ingredients and boil on medium heat until the potatoes and onion are tender.

The potatoes and onion should be soft enough to mash them easily to form a smooth and creamy texture.

Add milk and cream cheese and turn off the heat. Stir to mix well the cream cheese into the soup.

Now add all the remaining ingredients including cream of mushroom soup, celery soup, butter, garlic salt, salt, and pepper to taste.

Mix all the ingredients thoroughly to make every ladle of the soup flavorful.

Garnish the soup with chopped parsley and serve hot.
