Shahi Paneer Recipe Sanjeev Kapoor

Shahi Paneer is a rich Indian dish that is popular for special occasion parties or gatherings. Paneer or cottage cheese cubes are cooked in a very delicious and creamy sauce. The cashew nuts in this recipe are responsible to add a Shahi (Royal) touch.

The aromatic spices add an amazing flavor and beautiful smell to the dish. The gravy is basically made from onion, tomatoes, cashew nuts, cream, and butter. First, these ingredients are cooked in the kadai and then grind in a mixer.

This dish is rich and slightly high in calories, but the delicate flavor of this dish will make you realize that it is totally worth it. Most Indian recipes focus on the flavor and do not care about the calories. But, you can reduce some calories by using light cream.

This recipe is from Sanjeev Kapoor and it is an all-time favorite. You can make a number of different versions of this recipe like you can add vegetables or grilled chicken instead of paneer.

Ingredients

  • 400 g Paneer (Cottage cheese) cut into cubes
  • 2 medium Onions finely chopped
  • 5 medium tomatoes finely chopped
  • Oil 2 tablespoons
  • 1 teaspoon Red chilli powder
  • 1 tablespoon Coriander powder
  • Salt to taste
  • 2 tablespoons Butter
  • 15-20 Cashew nuts
  • Cream 1/2 cup + for garnishing
  • 1 teaspoon Kasoori methi powder
  • 1 teaspoon Garam masala powder
  • 1/4 teaspoon Green cardamom powder

How to make shahi paneer

In a non-stick kadai (Wok), heat oil and sauté onion and cashew nuts lightly. Add tomatoes and cook for 10 to 12 minutes until tomatoes are soft and pulpy.

Add red chilli powder, turmeric powder, coriander powder, salt and sauté for 1 minute.

Let this mixture cool then transfer to a mixer, add a little water, and grind to make a smooth paste. Transfer this paste back to the kadai.

Now, add butter, cover the kadai with a lid and cook for 10 minutes on low heat.

Add ½ cup cream and mix then immediately add paneer cubes, kasoori methi powder, green cardamom powder, garam masala powder, and mix well.

The wonderful shahi paneer is ready to serve. Garnish with cream and serve hot.
