Ingredients

  • 12 to 14 pound turkey
  • 1/4 cup extra virgin olive oil
  • 2 tbsp dried thyme
  • 1 tbsp powdered sage
  • 2 tsp dried oregano
  • 2 tsp paprika
  • 2 tsp sea salt
  • 1-1/2 tsp cracked black pepper
  • 1 tsp dried rosemary
  • 1 tsp onion or garlic powder (optional)
  • Zest of 1/2 an orange
  • 1/2 cup apple cider
  • 1/2 cup water
  • Apple or pecan wood chips

How to cook turkey in smoker

Preheat the smoker at 225F.

Mix all the dry herbs and spices in a bowl. Rub 1/3 of the seasoning inside the turkey.

Add extra virgin olive oil and orange zest to the remaining seasoning and rub this mixture on the outside of the turkey.

Add water and apple cider to the water pan in the bottom of the smoker. Place a drip pan on the next shelf above the water pan. Add the apple or pecan wood chips to the side drawer.

Place the turkey on the middle rack of the smoker and set the timer to 6.5 hours approximately. The smoke time depends on the weight of turkey. It should smoke 30 to 40 minutes per pound.

Check for smoke every hour and add more wood chips if needed. Also, check the internal temperature of the turkey every 3 hours with a thermometer that came with the smoker.

Take out the cooked turkey and place it on a cutting board. Give the turkey rest for an hour before cutting it into pieces.
