  • 4 eggs
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 pound Brazil nuts
  • 1 pound chopped walnuts
  • 1 pound pecan halves
  • 1 pound red candied cherries
  • 1 pound green candied cherries
  • 2 pounds pitted dates

How to make a delicious Texas Manor Fruitcake

  1. Put parchment papers in the baking dishes after greasing them with oil.
  2. Preheat the oven to 400 degrees F. Preheating the oven is good to provide enough temperature to your dish so that it can be baked properly.
  3. In a large-sized container, beat eggs with the blender. Also, add salt and vanilla to these beaten eggs until it has a smooth light texture, and is lemon colored.
  4. To make your batter sweet, add sugar, a cup of all-purpose flour, and only 2 tablespoons of baking powder.
  5. Take another large bowl, and put Brazil nuts, walnuts, pecan, red and green cherries. Dust your batter with the flour leftover.
  6. In this fruit mixture, add the egg and salt mixture. Blend to make it smooth. As the mixture is stiff, you can mix it with your hands.
  7. Pour this mixture slowly in the loaf pans in which you have brushed the oil on both paper and pan.
  8. Now the baking period is a little long. Bake for at least an hour for perfect results.
  9. Your fruit cake is ready and is a most served snack with tea or coffee.
