INGREDIENTS
- 2 large-sized eggs
- 2 tablespoons vegetable oil or coconut oil
- 1 3/4 cups buttermilk or regular milk
- 1/4 cup of vegetable oil for the skillet
- 2 cups self-rising cornmeal mix
Method to make the amazing Three Rivers Cornbread
- Take a skillet and pour oil into it. You need this oil to be very hot. So turn on high heat under the skillet.
- During this duration start making the bread batter. Take a large-sized bowl and add all the cornmeal mix to this bowl. Now pour oil into this corn meal mix and blend them slowly using an electric mixer or a hand mix.
- Now break the two eggs in this batter and blend them properly. Also, add buttermilk into it. Blend really well to get smooth.
- To check if the oil is hot enough, put a little amount of your batter in the heated oil. If it started sizzling then you will know that your oil is ready.
- Drop the whole of your batter into the hot oil and make sure you get a thin layer of it at the bottom of the skillet.
- After cooking for a few minutes, put this nonstick, oven-safe skillet in the oven.
- Bake your bread batter in the preheated oven for half an hour and the color of your bread will be beautifully golden browned.

Don’t we add sugar to the cornbread?
No, basically sugar is not part of the cornbread recipe but you can add it for a good flavor in your own bread as you can clearly customize the recipe.
Why my cornbread falls apart?
The addition of too much flour or too much cornmeal in the batter may cause your cornbread to fall. Try to make some variations in the recipe like decreasing the quantity of your mix or increasing the quantity of oil.
