Trisha Yearwood Breakfast Casserole Recipes

This breakfast casserole recipe contains the major breakfast food groups: eggs, sausage, and potatoes. With some coffee and juice to wash off, you’re ready to take on anything. It is an excellent, easy and inexpensive breakfast meal.

Ingredients

  • 2 cups frozen grated hash browns, thawed and dried
  • Cooking spray, or butter
  • 1/2 pound country sausage
  • 1/2 small onion, peeled and minced
  • 1/2 small bell pepper, seeded and minced
  • 1 cup of grated cheese
  • 3 large eggs
  • 3/4 cup whole milk or half and a half
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 teaspoon salt

How to prepare breakfast casserole

Heat oven to 375 degree. Drizzle, grease, or butter a 5 or 6-inch diameter saucepan.

Turn the sausage into a patty slightly larger than the skillet (it will shrink). Brown the patty in a skillet over medium-low heat, but undercooked. Remove from the pan and drain on a paper towel.

Now add diced onion and bell pepper to the same skillet and sauté for about 3 minutes, scraping up the browned bits as they loosen.

Season the hash brown in a small bowl with salt and pepper, then press firmly into the bottom of the prepared saucepan.

Spoon the sausage patty over the hash brown, and then sprinkle the onions and peppers over the sausage. Add cheese on the top.

Mix together the eggs, milk, Worcestershire sauce or half and half, and salt and pour into the prepared saucepan.

Bake for 30 to 35 minutes and a knife inserted in the center comes out clean. Chill for 15 minutes before serving.
