Ingredients

  • Chicken breast in fillets 600 g
  • Pitted green olives 30 g
  • Pickled gherkins 60 g
  • Red peppers 200 g
  • White celery 170 g
  • Carrots 150 g
  • Gruyere (or Edamer) 100 g
  • Salt up to taste

Ingredients for Dressing

  • Black pepper to taste
  • Delicate mustard 15 g
  • Salt up to taste
  • White vinegar 20 g
  • Extra virgin olive oil 100 g
  • Mayonnaise 120 g

How to prepare chicken salad

To make the tasty chicken salad, start by beating the chicken slices with a meat mallet, do it between two sheets of parchment paper so you will fray the meat without tearing them. Then cook on a hot grill and turn only when the meat is completely white and has the typical streaks of the grill. Then turn the chicken and add a pinch of salt on the cooked part. Place the chicken slices on a plate. Let them cool.

In the meantime, prepare the vegetables: take the pepper and remove the internal seeds, then cut the layers into julienne strips, peel and trim the carrots, then cut them into strips. Then cut the celery sticks into slices, the gherkins and pitted green olives. And finally cut the cheese into sticks (Gruyere or Edamer).

Meanwhile the meat has cooled down, cut it into strips then take care of the sauce that will serve as a salad dressing: put the mayonnaise in a bowl, and then add the mustard, white wine vinegar, salted and peppered. Finally pour in the olive oil to emulsify. Stir and set aside.

Now take a large salad bowl, pour in the chicken and all the vegetables: the peppers, the celery, carrots, cucumbers, cheese, olives and give a first stir and then season with the sauce, mix and cover with cling film; let it rest in the refrigerator for at least an hour.
