Eggless Vanilla Pastry Cake Recipe

The eggless vanilla pastry cake is a delicious New Year cake that is widely made in India. It is a bakery-style cake with yummy icing that you can easily make at home.

Ingredients

  • 2 cups All-Purpose Flour (Maida)
  • 4 tbsp Milk Powder
  • 1 cup Powdered Sugar
  • 1/2 tsp Baking Soda
  • 2 tsp Baking Powder
  • 1/4 tsp Salt
  • 1/2 Cup Oil
  • 1 Cup Milk
  • 2 tsp Vanilla Essence

For Sugar Syrup

  • 2 tbsp Sugar
  • 2 tbsp Water

For Icing

  • 2 Cups Fresh Cream
  • 2 tbsp Powdered Sugar
  • 1 tsp Vanilla Essence

How to make vanilla pastry cake

Sift twice all these ingredients: maida, baking soda, baking powder, milk powder, powdered sugar, and salt.

Add ½ cup oil and mix then add milk and vanilla essence and mix with a hand mixer or electric mixer until there are no lumps.

Arrange a butter paper at the bottom of a baking pan and grease it with oil. Pour the cake batter into the pan and bake for 35 to 40 minutes.

Allow the cake to cool then cut it into two layers with a knife.

For Icing: combine cream, powdered sugar and vanilla in a mixing bowl and beat on high speed for 3 minutes until the cream forms a stiff peak.

For Sugar Syrup: Add sugar and water to a bowl and mix until the sugar is completely dissolved.

Drizzle a little sugar syrup over the bottom layer of the cake and spread the icing to cover it completely. Place the second layer on it and pour a little sugar syrup over it and cover it with icing. Spread the icing on the sides of the cake as well.

The eggless vanilla pastry cake is ready. Slice and serve.
