The sesame oil and soy sauce bring a unique flavor to fried rice and colorful vegetables make this dish beautiful. We are using carrots, bell peppers, and spring onions in this recipe, but you can also add green beans, peas, mushrooms, and corn.
To make the perfect fried rice, you have to boil the rice a day before and store in the refrigerator. The recipe is quick and takes just 20 minutes to make the delicious veg fried rice.
Ingredients
- 2 cups long grain rice
- 1/2 cup chopped bell peppers
- ½ cup white of spring onions
- ½ cup carrots
- 1 tbsp vegetable oil
- 1 tsp chopped garlic
- 2 tbsp soy sauce
- 1 tsp sesame oil
- Green part of spring onions, to garnish
- Chopped peanuts, to garnish (optional)
How to make veg fried rice
Pour enough water to boil rice in a large saucepan or pot and place on the stove. Before boiling, rinse the rice in cold running water.
Add rice to boiling water and a pinch of salt, cover, and simmer for 6-10 minutes until rice is soft and tender. Drain and allow the rice to cool completely. Store the boiled rice in the refrigerator until ready to use.
In a wok or large frying pan, heat vegetable oil and sauté garlic for 1 minute. Add chopped carrots, bell peppers, spring onions, and cook for 3 minutes, stirring occasionally.
Add in boiled rice, soy sauce, sesame oil, and stir-fry for 1 minute.
Transfer the fried rice and vegetable to the serving dish. Garnish with peanuts and spring onions.
