Vegetables being healthy meals are always preferred in any form either in the form of a salad or in the shape of some fried food like cutlets and this lollipop. In this recipe, along with the vegetables, the addition of corn doubles the taste of your salads, soup, or any other dish. You can also coat your veg lollipop with bread crumbs.

These veg lollipops look so cool and appealing especially for the little ones at your place. Young ones always enjoy meals like these as they are forever tired of the desi food that they have to eat forcefully. INGREDIENTS

  • 1/2 cup corn kernels
  • Chopped carrots
  • 1 medium-sized potato
  • 1/4 cup green peas
  • 1-inch ginger
  • 2-3 green chilies
  • 1/2 cup Chicken, boiled and shredded
  • Yam 150 grams
  • 2 tbsp oil
  • Salt to taste
  • 1/2 tbsp Kashmiri Red chili powder
  • 1 tbsp chaat masala
  • A few fresh coriander leaves chopped
  • 2 tbsp corn starch

Easy steps to make Veg Lollipops by Sanjeev Kapoor

  1. Wash and drain all the veggies and then chop them including carrots and green chilies. Crush the green peas as well as ginger.
  2. Boil the potatoes and yam and then peel and mash them.
  3. Heat oil in a pan and then fry ginger with green chilies. Also, fry in the vegetables including carrots and crushed peas. Stir the mixture and then add corn. For seasoning add the required quantity of salt.
  4. In the mashed potatoes and yam, add the cooked mixture and mix. Now for spices, add garam masala, red chili powder, chat masala, and salt.
  5. Sprinkle cornstarch over the mixture to make it stay together.
  6. In the frying skillet or kadhai, heat enough quantity of oil. Now take the mixture from the bowl, shape it into a ball and then put one ball in the oil to test if it goes okay or breaks up.
  7. Repeat the process and make balls of the whole mixture. Deep fry the balls and give them a good fried color.
  8. You can use sticks such as ice cream sticks and then fix them in the balls after frying.
  9. Serve hot with ketchup ad green chutney.

How can I overcome the breaking up of my lollipop?

If your lollipop breaks up in the oil while frying, add more cornstarch to your mixture. It will help prevent it from breaking up.
