Vegetarian Pasta Recipe by Sanjeev Kapoor

Chef Sanjeev Kapoor always surprises us with his amazing cooking skills. He is used to coming out with a new recipe every week. This vegetarian pasta recipe by Chef Sanjeev Kapoor is a delicious Italian pasta that is made in Indian style by this Master chief.

The addition of sauces and spices is optional as you can customize your recipe according to your taste. But we have added vinegar, soy sauce, and chili sauce to give a good pop of color and flavor to our pasta.

Pasta is made in different styles by using tomato sauce or cream sausages but the recipes of Sanjeev Kapoor always have a twist that turns out to be a blast in case of aroma and flavor.

INGREDIENTS

  • 2 cups penne pasta
  • 2 1/2 tbsp red capsicum
  • 1/2 inch ginger sliced
  • 2-3 cloves sliced garlic
  • 1 medium onion sliced
  • 1-inch celery stalk chopped
  • 2 medium chopped carrots
  • 6-8 baby corns slit lengthwise
  • 1 medium julienne red capsicum
  • 1 medium julienne green capsicum
  • 10-12 snow peas sting cut diagonally
  • 1/2 tsp pepper powder
  • 1/2 cup vinegar
  • 1/2 cup red chili sauce
  • 1/2 cup tomato ketchup
  • 1/2 cup mayo
  • Salt to taste

The process to make Vegetarian pasta by Sanjeev Kapoor

  1. Boil pasta in a skillet filled with water after adding olive oil and salt in this boiling water. You can also follow the directions that are provided on the package.
  2. After boiling drain the water and add a tablespoon of olive oil to this blanched pasta to prevent it from sticking together.
  3. Bring yourself a frying pan and after heating the remaining olive oil at low flame, fry the chopped vegetables including onion, garlic, ginger, and celery. Keep stirring.
  4. In the next step add the red of the vegetables including the capsicums, carrots, corns, and peas in the pan. Mix them well and saute for a few minutes.
  5. Then in the end add the boiled pasta to the mixture. Also, throw in salt and pepper. For further spice and seasoning add all the sausages including mayonnaise, tomato ketchup, red chili sauce, and vinegar.
  6. Toss it well.
