  • 10 small round baby bell chile peppers
  • A small bottle of olive oil
  • 2 handfuls of arugula (rocket)
  • 1 handful of parsley
  • 1 handful of capers, drained after being soaked
  • 1 handful anchovies
  • 10 tablespoon balsamic vinegar
  • Salt to taste
  • Freshly grounded black pepper to taste

The process to make amazing Stuffed Peppers

  1. First of all, you have to do some prep work on the chile peppers, only then you can move forward towards the actual recipe.
  2. First, wash the chile and halve them to clean all the seeds and waste inside them. Once done wash them again. This time you should wash them with cold water.
  3. Drain all the water afterward.
  4. In a large dish or bowl pack the halved and cleaned peppers and cook in the oven for more than half an hour after pouring all of the olive oil in it. The temperature of the oven should be 350 degrees for cooking the peppers.
  5. After the cooking is done, you will see the peppers are all tenderized properly. Let them air cool for some time.
  6. In the next step chop the veggies including parsley, capers, and rockets. Also, chop the anchovies. Put all of them together in a bowl and mix. Pour some vinegar into the same bowl.
  7. Season this chopped mixture with salt and pepper and your mixture for stuffing is ready.
  8. Now fill this mixture into the bell peppers. Serve after arranging in the platter and have Fun!

What to do with the remaining olive oil?

After cooking the bell peppers in the oven, fill the olive oil back into the bottle. This will be perfect to use in salads, pizza, or pasta. So it is better to utilize the oil than to waste it.

Can we make the stuffed peppers the night before the actual day?

I will not recommend you to make these stuffed peppers before the actual time because the vegetables and other stuffing will not stay the same after a long time. Everything will lose its color and the dish will not look appetizing anymore.
