Williams Sonoma Paella Recipe

I know you guys are done with the regular boring rice dishes and want to add more variations to your meals. So an amazingly different recipe is on your way that is made by a completely different method. I am sure that you will love the recipe as it includes seafood.

Layers of shrimp and scallops over the rice! What an amazing combo of two completely different meals. Also then the vegetables are added to it like peas and onion. All combine to blast.

INGREDIENTS

  • 3 cups chicken broth (you can also use fish stock)
  • 2 tablespoon olive oil
  • 1 yellow onion chopped
  • 2 garlic cloves, sliced
  • 1 cup Paella or Arborio rice
  • 1/2 tablespoon saffron threads
  • 1 1/2 tablespoon salt
  • 2 roasted red bell peppers, cut into wide strips
  • 18 mussels, scrubbed
  • 3/2 lb shrimp, peeled and deveined
  • 5 oz bay scallops
  • 1 cup frozen peas, thawed

Steps to make William Sonoma Paella

  1. Take a saucepan and heat it. Add the chicken or fish broth and wait until it simmers.
  2. In a separate pan, after heating the olive oil on medium heat fry the chopped onions in the oil until browned.
  3. Also, add garlic to the frying onion so that both will get fried together. By the time the onion and garlic are fried, add rice to it and also crumble the saffron to it.
  4. Stir the mixture and cook for 2 minutes. Then pour the broth into the rice mixture but save half a cup of broth.
  5. Add salt in this half cup of broth and add in the mixture after stirring it properly.
  6. Boil the whole mixture.
  7. Then in the baking pan, spread the cooked rice and top it with the pepper strips in an even layer.
  8. At the lowest rack of the preheated oven, cook the rice for 20 minutes until all the liquid is absorbed by the rice.
  9. Then it’s time to cook the shellfish. In a saucepan add the remaining broth and also throw mussels in this broth. While your shake the pan constantly, cook and bring the mussels to boil.
  10. Then get all the mussels out of the broth on a plate. Then after cooking shrimp add it and also add the scallops in it.
  11. To finish the making of Paella, press the cooked mussels in the rice and then make layers of the shrimp and scallops over the rice. Also, spread the peas at the top.
  12. Drizzle the liquid left in the pan over the rice and then bake it for 10 minutes. Bake for another 10 minutes before you serve your amazing dish.
