Cracker Barrel Chicken and Rice Recipe

Ingredients

  • 1.5 Pounds of Chicken cut into strips
  • 2 Cups cooked rice (al dente)
  • 1 diced onion
  • 1 Can Cream of Mushroom Soup (or cream of chicken)
  • 1 Packet of Chicken Gravy

Instructions

  • First boil the rice, when the rice is halfway cooked, add diced onion and continue boiling the rice until cooked.
  • Grease a baking dish with non-stick spray or lightly coat with extra virgin olive oil.
  • Make a layer of cooked rice at the bottom of the baking dish.
  • Place the chicken strips on the top of the rice layer.
  • Pour the cream of mushroom soup over the chicken evenly.
  • In a bowl, combine the Packet of Chicken Gravy and 1 cup of water. Mix well and pour it over the chicken.
  • Cover the baking dish with aluminum foil and bake for 45 minutes in the preheated oven at 350F until the chicken is done.
  • The delicious chicken and rice casserole are ready. Remove the foil and serve immediately.
