Ingredients

  • 8 small flour tortillas
  • 1 pound ground beef or chicken
  • 1 cup black beans cooked
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 2 cups shredded cheese cheddar or Mexican blend
  • Jalapeños optional for a spicy kick
  • 2 tablespoons taco seasoning
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions

  • Prepare the Filling:
  • In a skillet, brown the ground beef or chicken in two tablespoons of olive oil. Add taco seasoning for that authentic Mexican flavor. Stir in black beans, corn kernels, diced tomatoes, and jalapeños (if desired). Cook until the mixture is well-combined and heated through.
  • Assemble the Mexi Rolls:
  • Lay out the flour tortillas and spoon the filling onto each one. Sprinkle a generous amount of shredded cheese over the filling. Roll up the tortillas, securing the edges to form compact rolls.
  • Bake to Perfection:
  • Place the Mexi Rolls on a baking sheet and bake in a preheated oven at 375°F until the tortillas are golden brown and the cheese is melted to perfection. The result is a crispy exterior with a gooey, flavorful interior.
  • Garnish and Serve:
  • Once out of the oven, garnish the Mexi Rolls with fresh cilantro for a burst of freshness. Slice them into bite-sized pieces and serve with your favorite salsa or guacamole.
