How to make apple pie

To make the apple pie, first melt the butter in the microwave or in a double boiler, and set it aside. Grate the lemon zest and squeeze the juice obtaining about 30 g, then set aside both the zest and the juice.

Divide the apples in half and core them, Peel the apples, then cut them into four parts and cut them into slices by cutting them for the short side.

Put the sliced apples in a bowl and sprinkle with the lemon juice, mixing them well: this operation will prevent them from blackening. Then sift the flour with the baking powder.

Then, in a large bowl, pour the eggs and part of the sugar dose. Start beating with electric whips and continue pouring the sugar a little at a time.

When the mixture starts to lighten, add a pinch of salt and continue to whip until you get a light and fluffy dough. At this point add the melted butter brought back to room temperature. Flavor with ground cinnamon and also add the grated lemon zest.

Then, still continuing to whisk, add the sifted flour and baking powder one tablespoon at a time. When the powders are completely incorporated, lower the speed of the electric whisk and pour the milk slowly at room temperature.

When the milk is completely incorporated, stop the whips: the dough is ready. Separately, drain the apples in a colander to remove the lemon juice and pour them into the dough.

Gently mix from bottom to top to incorporate them well. Grease and sprinkle a 22 cm diameter cake pan with sugar and, with the help of a spatula, pour the dough. The cake is ready to be baked: cook it in a preheated static oven at 180 ° for about 55 minutes.

When cooked, take it out of the oven and let it cool completely before removing it from the pan. Sprinkle the cake with icing sugar and serve: your apple pie is ready to be enjoyed!

Notes

Keep the apple pie at room temperature, preferably under a glass bell, for 2-3 days at the most. It is possible to freeze the cake once cooked.

If you don’t like cinnamon you can flavor the cake with the seeds of a vanilla bean. To make the apple pie richer, you can add pine nuts or raisins to the mixture.
